Biodynamics on a Michelin tasting menu

(Atlas of the Future) Mirazur, a Michelin three-star restaurant located in Menton on France’s Côte d’Azur, has long applied a holistic biodynamic agriculture philosophy to its own small estate but now the chef of the world’s best restaurant, according to this 2019 list, has extended the approach so that his tasting menu is also in synch with the cosmos.

Unable to open Mirazur for three months due to lockdown measures implemented by the French government, Argentina-born chef Mauro Colagreco took refuge in Mirazur’s gardens. When he wasn’t cooking twice a week as a volunteer for Menton’s local hospital, he was cultivating and harvesting herbs and vegetables, and preparing organic boxes for local residents. He used that time to conceive a vanguard and dynamic, indeed biodynamic, menu concept.
